Dark Chocolate Peppermint Cookies with Planet Oat Oatmilk

I love the holidays - and even more so, holiday traditions. Making Christmas cookies was always the best, but at my house, we always did the classic peel apart or slice cookie dough (we’re not a family of bakers). I’m almost 30 years old, and have never really learned how to make cookies from scratch! I feel like that is slightly embarrassing and I wanted to change that. 

With my baby boy coming soon and this being our first Christmas in our new home, I really wanted to take holiday cookie-making to the next level with homemade dark chocolate peppermint cookies with Planet Oat Dark Chocolate Oatmilk (peppermint is my favorite holiday flavor). It’s important to me to start creating family traditions we can share with our baby boy for years to come! From his kick responses in the womb, I would say he is already a big fan of cookies.

I am proud to say that I’ve made some cookies that you’ll be running to your kitchen to make, at least I hope! The ingredient that made these cookies special is Planet Oat Oatmilk, specifically the Dark Chocolate flavor. This is the perfect way to replace traditional dairy milk or any milk alternatives for a flavorful twist! Now for the fun part, the recipe… 

  • 1 cup almond flour 

  • 1/2 cup monk fruit baking sugar 

  • 5 tbsp cacao powder 

  • 1/2 tsp baking soda

  • 1/4 cup Planet Oat Dark Chocolate Oatmilk

  • 5 tbsp coconut oil 

  • 1 tsp peppermint extract 

  • 1/2 cup dark chocolate chips 

  • Optional: crushed candy cane 

  1. Mix together the flour, cacao powder and baking soda

  2. In a separate bowl melt coconut oil and mix with Planet Oat Dark Chocolate and extract 

  3. Combine wet into dry, mix well

  4. Fold in chocolate chips 

  5. Form dough into balls and place on a parchment lined baking sheet 

  6. Bake at 350 for 15-20 min (depending on the size of cookies!)

Add crushed candy cane if desired, let cool (or not) and enjoy. Preferably paired with a glass of Planet Oat Original Oatmilk to wash them down, the absolute perfect pairing!
